This bread just screams summer! Fresh berries, tart lemon juice and zest. I love it! It reminds me of the lemon bread at Starbucks, but with a twist- and even better!

For the Loaf
- 1 1/2 cups of all-purpose flour.
- 1 tsp of baking powder
- 1 tsp kosher salt
- 1/2 cup unsalted butter (room temperature)
- 3/4 cup sugar
- 1 tbs finely grated lemon zest
- 1 tbs lemon juice
- 3 large eggs
- 1/2 cup of whole milk
- 1 tsp vanilla extract
- 1 cup fresh blueberries
For the Glaze:
- 1/2 cup of confectioners' sugar
- 2 tbs of lemon juice
- 2 tbs unsalted butter melted
Directions:
1. Preheat your oven to 350 degrees.
2. Start by combining your sugar and lemon zest.
3. Add in your butter, mix until well combined.
4. Add in your lemon juice, vanilla extract, milk and eggs. Mix until well combined.
5. In a separate bowl, combine flour, baking powder, and salt.
6. Add the wet ingredients to the dry, slowly. Mix thoroughly.
7. After tossing the blueberries in about a tsp of flour, pour and combine into bread batter.
8. Pour the batter into a loaf pan, top with some additional blueberries (optional) and bake for 60 minutes.
9. While the bread is baking, make your glaze. Combine your butter, confectioners' sugar and lemon juice and whisk until well combined. (little to no lumps).
10. After the 60 minutes is up, let cool slightly, pour glaze overtop and enjoy!
